I believe this was played on the correct level. But yeah, game design is a bit bad not showing this in your final score. Although you can show the scores obtained when you're in the level select screen. Scrolling over each level will normally show you also the score obtained.

I understood your concern! The Level is selected in the tablet controller (you need to touch the level), so you cannot see in the TV.
You cannot play the game in tablet, only sling the birds.
Usually, the level selected is the last of the stage selection, there's no 3 star. May happen in some videos I play again a level completed to improve my score, I can advise if this happen.
Angry Birds levels are worldwide the same for all consoles and devices, Angry Birds wikipedia shows the screen for all level if have doubts of the level, but I am 100% sure all the levels are correct in my submissions.
